espresso chocolate chip baked oatmeal

Ingredients:

- 2 eggs

- 1/4 cup avocado oil

- 1/4 cup maple syrup

- 1 1/3 cup milk

- 2 tsp vanilla extract

- 2 1/4 cup rolled oats (we used Kodiak Oats for some extra protein!)

- 3 tsp espresso powder

- 1/2 tsp ground cinnamon

- 1 tsp bbaking powder

- 1/4 tsp sea salt

- 1/2 cup dark chocolate chips

- 1/4 cup mini semisweet chocolate chips

Instructions:

1. Preheat oven to 375º.

2. Whisk together eggs, oil, maple syrup, vanilla, and milk.

3. Add in rolled oats, espresso powder, baking powder, cinnamon, and salt.

4. Fold in chocolate chips and transfer to a 9x9 baking dish.

5. Bake for 35-40 minutes, or until golden brown.

6. Enjoy alone or add toppings such as cream/milk, honey or maple syrup!
