espresso chocolate chip banana muffins

Ingredients:

  • 3/4 cup butter melted

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 4 ripe bananas

  • 1 3/4 cup all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup semisweet chocolate chips

  • 1-2 tbsp espresso powder

Streusel:

  • 1/2 cup butter melted

  • 1/2 cup flour

  • 1/4 cup brown sugar

  • pinch of salt

Instructions:

  1. Preheat oven to 350 F

  2. In a large bowl, add sugars and butter and whisk to combine. Then, add vanilla and eggs and mix.

  3. In a separate bowl, mash up bananas and add them to the muffin batter.

  4. Add in flour, baking soda, espresso powder, and salt. Once combined, fold in chocolate chips.

  5. Fill muffin tin with the batter. Then, start on the streusel.

  6. Mix butter, flour, sugar, and salt with a fork until the streusel becomes crumbly. Sprinkle on top of each muffin.

  7. Bake muffins for 20-25 minutes. Enjoy!
