chocolate chunk espresso muffins
Ingredients:
- 2 3/4 cups all-purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1-2 tbsp ground espresso
- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 1/2 cups dark chocolate chunks
Instructions:
1. Preheat the oven to 375°F
2. In a bowl, mix together the first five ingredients. Set the bowl aside and in a stand mixer, combine the sugars and eggs. Then, add the milk, oil, and extract and mix for another minute.
3. Add the dry mixture to the wet ingredients and mix until combined.
4. Fold in the chocolate chunks.
5. Fill muffin tins and bake for 20-22 minutes.
