We hope this guide helps you better understand TBC’s roasting efforts and what we mean when we say things like “light roast.” We promise you, no matter where your taste preference may land on the Flavor Wheel, we got you covered. We encourage you to use this tool to better help you decide which coffees to try amongst our current offerings.

  

Please remember this information is our own view and is unique to TBC. We do not suggest that our roast meter is the go-to for any roaster beyond ours. Yet, it is well within industry guardrails and based on our over 30 years of experience in specialty coffee. Our hope is to effectively communicate our ideas around roast profiles.

It is not a part of our identity to make ‘who’s right’ comparisons, or broad bold coffee related claims. We shrink from the pretentious dogma that is rife within the industry and used as a clever marketing tool. Rather, we collectively buy into a value set and work very hard as a team to practice those principles everyday. We believe this creates our best expression of what it means to be a family owned and operated high value minded coffee company; one that seeks to build a community around the highest quality certified organic coffees.

Hopefully this information will help you make a more informed decision when you're noodling around on our website. Are you seeking a fruit forward single origin African? Perhaps you fancy smooth big chocolate, citrus and nuts. Or maybe it's dark cocoa, big syrupy body, and spice that carries the day. What you can feel good about is that TBC has it all right here.

Light Roast

Cinnamon Roast

A very light roast level. Light brown in color and a great choice for more mild-bodied coffees. Prominent acidity with fruit-forward notes and wonderful, fragrant aromatics. Light roast coffee should not have any oil on the surface of the coffee beans. If you prefer bright, fragrant, floral or fruity notes, you'll enjoy a light roast coffee.

Light Medium Roast

City Roast

Medium shade of brown – balanced body, noticeable acidity. Medium roast coffee is medium brown in color with a non-oily surface. Traditionally, a medium roast is the most preferred type of coffee roast in America. If you prefer a flavorful, traditional cup of coffee, you'll enjoy a light medium roast.

Medium Roast

Full City Roast

Medium dark brown. Finish on the bean and roast character is prominent. Chocolate, caramel, and nuts, acidity is muted. Makes a lovely espresso.

Dark Medium Roast

Vienna Roast

Dark brown with light surface oil, bittersweet dark chocolate, caramel with a heavy body. Exceptional with any acid neutralizer.

French Roast

French Roast

Almost black, shiny with oil, acidity diminished. Big, roasty, tons of body and mouthfeel. Dark roast coffee beans are oily and produce a noticeable bittersweetness. The darker the coffee bean, the less acidity will be present in the coffee. If you prefer a heavy mouthfeel and strong flavor, you'll enjoy a dark roast coffee.
